Based in Newcastle, Leigh’s Patisserie offers elegant mobile high tea experiences designed for celebrations, gatherings and special occasions. Each menu combines classical patisserie techniques with carefully developed gluten-free baking methods, creating food that is indulgent, refined and welcoming for every guest at the table.

Meet Heather LEIGH Slight
Leigh’s Patisserie is led by qualified chef and pastry chef Heather Leigh Slight, whose passion for baking began in childhood and has grown into a lifelong dedication to creating beautiful food.
For more than twenty years Heather Leigh and her husband have followed a gluten-free diet after recognising the significant impact gluten was having on their health. While removing gluten improved their wellbeing, it also highlighted how difficult it could be to find gluten-free baked goods that were truly enjoyable.
Many store-bought options were dry, overly sweet or lacked the texture and flavour of traditional baking.
Heather Leigh began experimenting in her kitchen, determined to create breads, pastries and cakes that could rival their traditional counterparts. Over time she developed a wide range of recipes that delivered the flavour, texture and presentation she believed gluten-free baking deserved.
A Journey Through Baking
Heather Leigh spent five years living in Wagga Wagga, where she operated a successful gluten-free home bakery. During that time she sold her products at local farmers markets and through online orders, building a loyal following of customers who appreciated the quality and care in her baking.
The experience allowed Heather Leigh to refine her techniques and develop a diverse range of breads, cakes and pastries that demonstrated just how delicious gluten-free baking could be.
After returning permanently to Newcastle in 2023, Heather Leigh continued to expand her patisserie skills and began exploring ways to bring her baking into a more experiential setting.
